5 Recipes That Are Yummy AND Healthy

Yes, really.

If you’re reading this – and, if you’re anything like me – it’s probably just come to your attention that summer is just two months away. I repeat, SUMMER IS ONLY TWO MONTHS AWAY!

And of course, since you’re here, you’ve most likely just entered the internet breaking, compulsive google searching days of,  “how the F do I lose 10Kg in 24 hours whilst still enjoying the foods that are bad for me?”.

Well, have no fear – because below are 5 healthy recipes that will help you replace those evil winter cravings with surprisingly delicious alternatives that won’t expand your waistline.

Summer 2017, here we come!

Cauliflower Pizza

Pizza – we all love it. But what if I told you there’s a way to wake up from that #FoodComa and still love yourself?

Cauliflower Pizza. I know right? Justice has finally been served to that odd looking broccoli. This vegetable-based pizza crust is low in carbs, low cost and sure to satisfy your pizza cravings!

How to make it:

Steam and lightly crush the cauliflower. Mix the cauliflower in a bowl with parmesan, oregano, garlic powder and egg and then spread on a tray like a pizza base. Bake for 20 minutes. Once the crust is crisp, add a fresh tomato paste or basil pesto spread, and top with mozzarella, spinach, caramelized onion and sun-dried tomato. Enjoy!

Garlic Roasted Mushroom & Cottage Cheese Salad

Kale might not be a man’s best friend but it sure does compliment garlic roasted mushrooms! Your taste buds can thank me later.

How to make it:

Crush some garlic, thyme, and lemon and marinate the mushrooms. With unsalted butter, lightly cook the mushrooms in a pan until caramelised.  Lightly caramelise the onions in a separate pan with coconut oil. Spread a spoon full of fresh cottage cheese on a plate with kale leaves and top with the mushrooms, onions and pine nuts!

Beetroot Puree Hummus & Yogurt Dip

How to make it:

Place a beetroot, 3 garlic gloves, a can of chickpeas and half a cup of water in a food processor. Once mixed, add the tahini, lemon juice, and salt until textured like a puree. Place the mix in a bowl, and top with labneh. Drizzle some olive oil and garnish with walnuts for that extra hit of Omega 3. Side with wholemeal pita chips and bon appetit!

Meat Stuffed Zucchini

Finger licking bloody good. A dish that will surely keep you coming back for more.

How to make it:

Cut off the zucchini stalk and slice off the dried tips, keeping one side of the zucchini closed. Carefully hollow out the zucchini with a manakra. Wash the zucchini in a bowl of salted water in order to keep them firm when steamed. Hand fill each zucchini with uncooked rice, mince-meat, and tomato. Ensure you only fill 3 quarters of the Zucchini to leave room for expansion.

Fill a large saucepan with water, salt and mix with tomato paste. Place the zucchini in the saucepan and allow them to cook on a low heat for 1 hour. Serve with tzatziki for an extra bang of flavour!

P.s for our vegetarian friends, replace the meat with chickpeas!

Haloumi & Pumpkin Quinoa Salad

Summer’s all about colour, so why not get colourful and creative in time for the big day.

Pan-grilled halloumi. Roasted pumpkin. Vinegar pickled onion. Quinoa. Honey, Lime and Coriander dressing.

It is that simple. I gotchu.
